Trappist beers must be brewed within the walls of a Trappist abbey, by or under control of Trappist monks. The choices of brewing must depend upon the monastic community and there economic purpose must be directed towards charitable assistance, not for profit. When poured this beer is a mahogany, deep amber brown colour with a decent beige head. A subtle aroma of hop, dried fruit and Belgium style yeast is evident. This beer is distinguished by its character of strongly alcoholic beer. Wine like in taste. the body is smooth with a roasted malt taste, with hints of cherries, raisins and figs. A noticeable alcoholic warmth is present but with a pleasant finish. Top fermentation gives Chimay beer a distinctive fruitiness of flavour.
